固然,在中国也会有对乡土历史的倾向,但这种“历史记忆地方化”的现象之所以在日本特别明显,当然也是因为在日本延续数百年的幕藩体制带有某种“联邦制”的特性,人们高度认同的是“本藩”而不是整个日本,战后的地方自治制度可说是它的历史延续。这样,历史记忆势必立足于当地,用以支撑和强化地方认同,呈现出纷繁复杂的面貌,正如美国南方对内战的纪念至今带有悲情。由于目光聚焦在地方,这些展览中即便提到明治维新对日本的意义,大体也是“我们曾在推动日本变革中起到巨大作用”这样一种视角。毫无疑问,这样的取向中不会提到明治维新对日本境外的影响——但这确实曾实实在在地影响了亚洲很多国家。不仅是戊戌变法,孙中山当年在日本避难时也曾说:“明治维新是中国革命的第一步,中国革命是明治维新的第二步。”《剑桥东南亚史》也曾提到,明治维新曾“鼓舞了大批东南亚的政治活动家,尤其是越南和菲律宾的政治活动家”。

Hidden Stories of Chinese Migration and Culture Found in Giant Genetic Study
Comb through the DNA of Chinese people and you’ll find a trace of this culinary story, according to the largest-scale genetic study of Chinese people to date, published Thursday in Cell. The authors reported that a mutation of FADS2, a gene involved in metabolizing fatty acids, is more common in northern than southern populations, indicating a diet richer in animal content. It is one of an assortment of findings resulting from a sweeping analysis of genetic information from 141,431 participants.

Minority ethnic groups showed more genetic divergence than the Han, particularly Uyghurs and Kazakhs in Xinjiang and Mongols in Inner Mongolia.

In an otherwise coffee drinking country, East Frisia is noted for its consumption of tea and its tea culture. Strong black tea is served whenever there are visitors to an East Frisian home or other gathering, as well as with breakfast, mid-afternoon, and mid-evening. Tea is sweetened with kluntjes, a rock candy sugar that melts slowly, allowing multiple cups to be sweetened.[6] Heavy cream is also used to flavour the tea. The tea is generally served in traditional small cups, with little cookies during the week and cake during special occasions or on weekends as a special treat. Brown rum, mixed with kluntjes and left for several months, is also added to black tea in the winter. The tea is alleged to cure headaches, stomach problems, and stress, among many other ailments.

唸哲學的人,大概會關心你是個什麼人的事實,如何可能推出你應當如何做的規範式結論。

從這種角度來看,身份認同可能不是一個從事實推出規範結論的推導過程;而是一個因為我想當某種人,所以我才看到了某種事實的逆向運動。

The choice cuts are obvious, and the dried roe (bottarga) is especially prized, but in the tonnara, the fish’s entrails and offal also were salted or preserved in oil for various uses, and difficult portions such as the joints and buzzonaglia were accorded care. Even the lattume, the male Bluefin’s sac of seminal fluid, was kept for the table.

I was drawn again and again to the tonnare. Only now do I realize I was fatigued by the endless palazzi and cathedrals of the rich that one is pointed to in Italy. It was refreshing to encounter a place where typical people—workers—lived and made a living.

For all we romanticize the notion of “work” in America, and as much as the politicians shill for it, the daily life of a laborer is the first thing to slip the collective memory. Instead, our children are taken to visit the mansion, the cathedral, or the art museum where the dirty money was poured. The factories corrode. The roof falls in. The weather comes. I remember bored teenage friends throwing rocks at the high windows of Dalzell-Viking Glass—their people had surely worked there blowing glass, but no one had a sense that it was of any importance. I didn’t either, not at the time. I probably would have thrown a rock had I any athletic ability.

Russia as a whole has made massive progress in the last 10 years, across education, health care and infrastructure. Large differences still persist between the poorest and most prosperous parts, and the recent slump in oil prices has slowed down development.

Moscow and St. Petersburg lead the pack—their indicators put them alongside countries like Italy and Greece. Were it not for a low life expectancy, the two cities would be on par with the US, Canada and Scandinavia.

Northern Siberia, especially Tyumen Oblast (darkest green), also gets a high score. While health and education indices in this region are about average for Russia, incomes here are very high thanks to investment by large energy and mining companies. Despite the awfully harsh climate, cities like Tyumen and Surgut are attracting thousands of people due to high-paying jobs.

The Caucasus region lags in development, particularly the Republic of Chechnya, which is still recovering from multiple wars. Development here is similar to countries like Ecuador or nearby Ukraine—low by Russian and European standards, but still considered “High” by the United Nations.

Areas of far western Russia like Pskov, Tver and Smolensk oblasts also lag behind. This may seem surprising, due to their proximity to the powerhouses of Moscow and St. Petersburg, but this is a curse rather than a blessing. Seeking opportunity, talented young people flocked to the capitals, leaving their home regions to decay.

The Far East, meanwhile, is a mixed bag. The island of Sakhalin, as well as Yakutia—Russia’s largest subject—are profiting from mineral wealth. But border regions near China and Mongolia and languishing, with little industry or opportunity to dissuade residents from moving west.

In peasant farming societies, you have the nose-to-tail eating. You kill the pig and you eat every part of it, for economic reasons as much as anything. Also, in China, the thing that really sets it apart is this preoccupation with the delights of gastronomy and the pursuit of the exotic.

In particular, the appreciation of texture. A lot of offal foods have very interesting textures. Like these fire-exploded kidney flowers. They have that kind of slightly brisk crispness with the tenderness of a kidney that has been cut in this beautiful, ornate, crisscross pattern and then stir-fried very fast. It’s a textural pleasure.

Try to feel it. Try to feel that slightly slithery, gelatinous quality, that little crispness in the bite. It’s like what I like to think of is edible oxymoron, this softness and crispness. Chinese love these sensory contradictions.

Sichuanese food, beyond the spicy stereotype, is about the artful mixing of flavors. It’s about fu he wei — complex, layered flavors.

China has a very dynamic, open food culture and people are always into the next best thing.

They say yao shi tong yuan, the food and medicine come from the same source. Every food has its tonic properties. If you’re unwell, the first thing you do is address your diet. Food is very important in that way.

普通话在中国大陆推广使用数十年,但各地人使用时,仍有明显的方言特色。特别是在南方,“胡建人”、“你问我滋瓷不滋瓷”等说法屡见不鲜。湖南人和四川人的普通话还因为特征突出,而被分别命名为“塑料普通话”和“椒盐普通话”。

根据台湾《国语一字多音审定表》及大陆《普通话四读词审音表释例》,两岸的字音有许多差异。以“期”字为例,台湾地区念 2 声,大陆地区念 1 声。二者在读音上的取舍显示,台湾地区较重视字音的渊源,音多来自北京书音。而大陆地区重视字音通俗化,偏重北京普罗大众的口音。

大部分相关领域的学者认为,满语对汉语的影响,远远小于汉语对满语的影响。在清代汉语,特别是清代的北京方言中,确实一度收入了一些满语词汇,但是现在学术界公认的由满语传入汉语的词汇当中,除“沙琪玛”一词以外,其余均已基本在现代汉语普通话或北京方言的日常口语中消失(但有个别与宫廷或官制有关的词,如“格格”、“额娘”等,在影视剧的帮助下,在口语中有极少的、戏谑化的复活)。主流学术界几乎没有确认满语对现代汉语普通话或北京官话有什么明显的影响。

我所见过无锡话的最大宗师,是我故去的外婆。她老人家,市井方言,浩荡出口,珠玑玉润,无穷匮也。形容吃饭慢则“前三灶吃到后三灶”,形容东西臭则“腾三间”,这些都是我自己按着音穿凿附会的,也不知道对应汉字实际怎么写。至于我外婆那些江南切口,很多都是只可意会不可言传。小时候,我和她坐公车去城中公园时,一个男人挤上车,推了我一把,我跌倒在地,外婆当场发作,先一句话开场:
