Mr. Shaich: We were clearly the first people out there in the space. For at least five years, in the mid '90s, my stock was flat. I couldn't get anybody to see a place that existed between fast food and fine dining.

Basically, fast casual is us, Chipotle and Starbucks . Probably between the three of us, we represent 95% of the sales that are considered fast casual.

Uster reps, mostly former pastry chefs, drop in on former students with new recipes, product demonstrations and advice on kitchen redesigns. It's this sort of customer support--reminiscent of the "detailing" drug companies do with doctors--that brought Uster to $20 million in sales, from baking chocolate, tarts, candied fruits and pastries.

By such means the Swiss-born Braun, a former food consultant, intends to double sales by 2005. That assumes a growth rate of 9% per year on existing products and $14 million from a new line of frozen foods including Danishes, cakes and hors d'oeuvres. He'll have to claw his way there: Kraft Foods (nyse: KFT - news - people ) and Nestlé import their own European chocolate labels; there are scores of other scrappy distributors. Even at $40 million in sales, 23-year-old privately held Uster would still be but a crumb in the $8-billion-a-year U.S. wholesale market.

Still, food producers and grocers haven’t yet passed on to consumers all the effects of their commodity price hikes, said Kevin Grier, senior market analyst at the George Morris Centre, an agri-business researcher in Guelph, Ont.

“We as consumers still haven’t felt the full brunt of price increases.”

As a consumer, a price hike will force him to stick more to necessities – bread rather than pies or cakes; chicken legs instead of pricier chicken breasts. “I’ll buy less of the discretionary things,” Mr. Grier said.

Anecdotal evidence indicates that stand-alone cupcake shops have been
spreading not just in the acknowledged cupcake meccas of New York and
Los Angeles but also in Boston, Denver, Austin, Tex., and lots of
smaller places. Nationwide, cupcake sales, are projected to rise another
20% over the next five yrs. at a time when other baked goods are
expected to grow in the single digits. “Cupcake stores are taking the
place of ice cream stores,” said Adam Borden, whose Baltimore-based
venture capital firm, Bradmer Foods, specializes in food-focused
enterprises. Thus far, there seem to be four basic cupcake business
models: (1)The Chain; (2) The Web-Only Store ; (3) The Cupcakes and More
Store ; (4) The Sole Bakery .
