Roasted Bone Marrow Recipe | Leite's Culinaria
1. Fill a large bowl halfway with ice water and add 1 teaspoon coarse sea salt per 1 cup water. Add the marrow bones and refrigerate for 12 to 24 hours, changing the water every 4 hours and replacing the salt each time. Drain and refrigerate until you’re ready to roast the marrow. This removes the blood and any impurities from the marrow. Drain the bones and pat them dry. Be sure to roast the soaked marrow within 24 hours or freeze the drained bones for up to 3 months.
2. Preheat the oven to 450°F (230°C).
3. Place the drained and dried marrow bones in a roasting pan. If the bones are cut crosswise, place them standing up; if the bones are cut lengthwise, place them cut side up. Roast for 15 to 25 minutes, until the marrow has puffed slightly and is warm in the center. To test for doneness, insert a metal skewer into the center of the bone, then touch it to your wrist to gauge the marrow’s temperature; the roasted bone marrow should be very hot. There should be no resistance when the skewer is inserted and some of the marrow will have started to leak from the bones. Serve the roasted bone marrow immediately with spoons for scooping.

One-Pot Recipe: Lemongrass Chicken - WSJ
TOTAL TIME: 35 minutes SERVES: 4

8 boneless chicken thighs

Kosher salt

4 cloves garlic, minced

2½ shallots, sliced in rounds

3 tablespoons peeled and thinly sliced lemongrass

2 tablespoons minced fresh ginger

½ tablespoon ground turmeric

4 Thai chiles, thinly sliced

5 tablespoons thinly sliced lime leaves

2 teaspoons sugar

2 cups coconut or canola oil, plus more as needed

1 pound green beans, ends trimmed

2 limes, cut into wedges

Cooked rice, for serving

Fresh cilantro, to garnish

1. Season chicken all over with salt. In a blender, puree 2 cloves garlic, ½ sliced shallot, lemongrass, ginger, turmeric, half the sliced chiles, 3 tablespoons sliced lime leaves and sugar to make a uniform paste. Rub paste all over chicken, cover and set aside.

2. Heat oil with remaining shallots in a wide medium pot set over medium heat. When oil bubbles, after 1-2 minutes, add remaining sliced chiles and fry until crisp at edges and lightly golden, 1-2 minutes more. Use a slotted spoon to transfer fried shallots and chiles to a paper-towel-lined plate and season with salt.

3. Remove any debris from oil and add more oil if needed to reach ½ inch. Set over medium heat. Once oil is hot, shake excess marinade from chicken and lay, skin-side down, into oil.

3 pounds chicken (cut into large pieces; drumsticks, thighs, and wings)
+ 1 lb corned beef brisket or salted pigtail cut into bite sized pieces(you can use regular beef also)
salt to taste
black pepper to taste
2 teaspoons canola oil or other neutral oil
1 cup onions (diced, divided equally)
4 sprigs thyme (divided equally)
1 cup black-eyed peas (dried, or dried peas of your choice, soaked overnight)
4 cups coconut milk (fresh or substitute with 2 cups canned coconut milk and 2 cups water)/1 13 oz can coconut milk
2 cups rice (long-grain, parboiled, washed and drained)
10 large basil leaves (sweet, torn)
1/2 cup tomatoes (diced), tomato paste
2 green onions (sliced thinly; white and green parts)
+ pumpkin, spinach and ochroes
+ approximately 5 cups water

Pressurize the black-eye peas; don't use oxtail--too bony. Try salt beef instead or the meat recommended in the recipe.

America’s enthusiasm for avocados may be dented, however, by soaring prices. The wholesale price for a case of 48 avocados peaked at $83.75 in September, up from $34.45 a year before....Supply shortfalls, brought about by droughts, storms and wildfires in California, Chile and Mexico, help to explain the jump. Production in California dropped by 44% in 2017. Harvests in Mexico that year were off by 20%. Labour strikes in the country further reduced supply.

Growing global demand is also pushing up prices. Both Chile and Peru have concluded trade agreements with China, eliminating tariffs on their avocado exports. Peru’s avocado sales to China, although small in volume compared with Chile’s and Mexico’s, surged by 3,700% in 2016. Other countries, including Canada and Japan, have also worked up their appetite, raising aggregate imports by 32% between 2014 and 2016.

Raising production will be tricky. This is because avocados are a fussy plant to grow...Salinity levels need to be just right, the slope of the terrain not too steep and temperatures stable. Erratic weather conditions can easily kill the crop.

Dinner Tonight: Beer-Battered Fish Recipe | Serious Eats
For the Batter
1 cup all-purpose flour
1 cup cornstarch
one 12-ounce can beer (ale, larger)
1 large egg
1 teaspoon kosher salt
For the Fish
6 cups peanut or canola oil
1 ½ pounds skinless fillets (cod, flounder, fluke, or haddock), cut into four pieces, less than ¾-inch thick
salt and pepper
malt vinegar, or lemon

For the Batter: Whisk together flour, cornstarch, beer, egg, and salt in a medium-sized bowl. Make sure there are no lumps. Cover bowl and place in fridge for at least 20 minutes, and up to 3 hours.

For the Fish: Pour oil into a large dutch oven. Turn heat to medium and bring to a temperature of 375°F.

Dry fish fillets with paper towels. Season both sides with salt and pepper. Drop each piece into the bowl of batter.

When oil is at 375°F., remove one piece of fish out with a pair of tongs, letting the excess batter drip back into the bowl. Then lower it into the oil, holding on to it for a few seconds to keep it from sticking to the bottom. Repeat process with other fillets. Adjust heat to medium-high to keep temperature at about 350°F. Cook until fillets are golden brown, about five minutes.

Drain fish fillets on a baking sheet covered with paper towels. Serve with cole slaw, malt vinegar, lemon, or whatever you like best.

A. Culinology is a fusion of culinary arts and food science. Culinologists typically create food concepts for food companies and restaurants that end up on store shelves and menus. We are also known as research chefs. People come to Ingredion for the ingredients we manufacture, like starches, texturizers and sweeteners, or to collaborate on a product. I work on both types of projects in our professional test kitchen, and I also give presentations to potential customers. Jamaican Red Bean Soup, Crockpot Vegan Bean Soup Recipe

1 Tbsp extra virgin olive oil
2 cloves garlic, minced
2 cups sliced baby carrots
3 scallions, chopped
1 sweet potato, diced
1 (15 oz) can diced tomatoes, drained
2 tsp curry powder
1/2 tsp dried thyme
1/4 tsp red pepper flakes

1/4 tsp ground allspice
Salt and freshly ground black pepper
2 (16 oz) cans dark red kidney beans, drained and rinsed
1 cup unsweetened coconut milk
1 - 2 cups unsalted vegetable broth or water
Optional: 1/4 tsp salt or to taste

Pour the oil into a 4-quart slow cooker and set the cooker on high. Add the garlic and put the lid on the cooker while you prepare the rest of the ingredients
To the cooker, add the carrots, scallions, sweet potato, and tomatoes
Stir in the curry powder, thyme, red pepper flakes, allspice, and salt and pepper to taste
Add the beans, coconut milk, and broth
Reduce heat, cover, and cook on low for 6 to 8 hours
