Jamaican Red Bean Soup, Crockpot Vegan Bean Soup Recipe

1 Tbsp extra virgin olive oil
2 cloves garlic, minced
2 cups sliced baby carrots
3 scallions, chopped
1 sweet potato, diced
1 (15 oz) can diced tomatoes, drained
2 tsp curry powder
1/2 tsp dried thyme
1/4 tsp red pepper flakes

1/4 tsp ground allspice
Salt and freshly ground black pepper
2 (16 oz) cans dark red kidney beans, drained and rinsed
1 cup unsweetened coconut milk
1 - 2 cups unsalted vegetable broth or water
Optional: 1/4 tsp salt or to taste

Pour the oil into a 4-quart slow cooker and set the cooker on high. Add the garlic and put the lid on the cooker while you prepare the rest of the ingredients
To the cooker, add the carrots, scallions, sweet potato, and tomatoes
Stir in the curry powder, thyme, red pepper flakes, allspice, and salt and pepper to taste
Add the beans, coconut milk, and broth
Reduce heat, cover, and cook on low for 6 to 8 hours

Wicked Thai Chicken Soup

4 stalks lemongrass cut in 4 " lengths, remove outer sheath and the hard ends. Hit the stalk a few times with the back of a knife or a heavy frying pan,
1 Tbsp olive oil
397gr (2 medium) onion finely minced - shallot’s work good too.
3 Tbsp garlic clove, minced
60gr Thai red curry paste - I use Maesri brand .5 of a can.
10 slices of galangal (fresh or frozen) Do not peel, slice into six 1/8" thick slices
10 kaffir lime leaves
12 cups of good chicken stock
2 pound of boneless, skinless chicken breast sliced into strips
1 can straw muchrooms chopped and drained.
15gr Dried Porcini mushrooms (about 1 cup) soak in water for a few hours or over night (add water with mushrooms to soup.
3 cans of unsweetened coconut milk
Juice of 3 limes
4 TBS Nam Pla (fish sauce) (mothers best has the least sodium so used that)
3 green onion sliced on the diagonal
1 cup minced cilantro
To thicken the soup I used “THICKENTHIN NOT/STARCH™ THICKENER” but I am sure corn starch would work.
3 cups of already cooked brown rice.,
1, 28fl oz can of diced tomatoes.

Video: Chilled cucumber soup: the perfect summer lunch - The Globe and Mail

1 English cucumber (about 500g)
1-1/4 cups plain yogurt
1 clove garlic
2 tbsp white wine vinegar
9 to 10 fresh mint leaves (plus extra for garnish)
1 cup half and half cream
salt and pepper


Wash and roughly peel the cucumber, leaving some green on the exterior. Halve it lengthwise and scoop out the seeds with a spoon. Cut the cucumber into a large dice.

Place cucumber, yogurt, garlic clove, vinegar and mint leaves in a blender or food processor and buzz until smooth.

Pour the soup into a clean bowl and add 1 cup half and half cream. For a slightly denser, silkier feel use a higher fat cream but add less. Just taste as you go.

Season with salt and pepper and keep chilled in the fridge until you serve.

Miso Soup
Miso, a paste made from fermented soybeans and grains, is a wonderful flavouring for soups. It's aged anywhere from 2 months to several years; for the best flavour choose one that has been aged for 2 years.
1/4 cup arame 50 ml 6 cups cold water 1.5 I 1 1/2 oz. kombu 42 g 1 onion, diced 1 2 carrots, thinly sliced 2
112 tsp. grated ginger root 2 ml
1 tbsp. mirin or rice vinegar 15 ml 1/4 cup barley miso 50 ml 112 cup mushrooms, sliced 125 ml 8 oz tofu. diced 250 g
1/2 cup chopped red pepper 125 ml
1/4 cup chopped chives 50 ml
1. Soak arame in 1 cup/250 ml water for 15 minutes; drain.
2. In large soup pot, combine water and kombu. Heat slowly over medium heat
for 20 minutes; do not let water boil.
3. In non-stick skillet, cook onions until soft, about 4 minutes; add carrots, red pepper and arame; cook 5 minutes.
4. Remove softened kombu from soup pot; add ginger root and mirin. Bring stock to a simmer. 5. Pour 1/2 cup (125 ml) of stock into small bowl; whisk in miso until well
blended. Stir miso mixture back into soup pot. Add mushrooms, tofu and onion mixture. Simmer 5 minutes. Serve hot with chives sprinkled on top. Makes 6 servings.
