this looks like it might be like Izmir's!! Add baking soda to the chickpeas as they soak overnight and then add some more when they are cooking. This helps remove the skins. Plunge into ice cold water when done cooking and the skins should float back up. Add chick peas back to some water and warm up again. They should be warm when going into the food processor in order for the right consistency.
